Saturated Fat: What It Is and Where It Comes From

Saturated fat

Partial hydrogenation

An industrial process that adds hydrogen to vegetable oil under pressure, creating partially hydrogenated oils. This process produces trans fats as a byproduct.

LDL cholesterol

Low-density lipoprotein cholesterol, sometimes called "bad" cholesterol. Higher LDL levels are generally associated with a greater risk of cardiovascular disease, though the full picture is more complex.

Trans Fat: The Category to Watch on Labels

Trans fat can occur naturally in small amounts in some animal products, but the form most relevant to public health guidance is artificial (or industrial) trans fat — created through a process called partial hydrogenation, which converts liquid vegetable oils into semi-solid fats to extend shelf life and improve texture.

The U.S. Food and Drug Administration (FDA) determined that partially hydrogenated oils (PHOs) — the primary source of artificial trans fats — are not generally recognized as safe, and required manufacturers to remove them from foods. As a result, artificial trans fats have been largely phased out of the U.S. food supply, though trace amounts can still appear in some older or imported products.

On a Nutrition Facts panel, look for "Trans Fat" listed under total fat. An ingredient list showing "partially hydrogenated oil" is the clearest signal that a product contains some level of industrial trans fat, even if the label reads 0 g (because amounts below 0.5 g per serving can be rounded to zero).
